Cake Batter Rice Crispy Treats

I've been dying to make these goodies for a long time - I've made regular rice crispies and felt they needed a little more taste and sweetness (I know, hard to imagine). So, adding yellow cake mix is the perfect addition! After I made these, I thought about making another batch soon and adding some red velvet cake mix instead... definitely going to try that. 


I followed this recipe to make these extra sweet yellow cake batter rice crispy treats. These are definitely a perfect, fast and easy sweet treat if you're feeling bored at home or just need a quick sugar burst of energy.  


This recipe is also great because it tells you how you could use the leftover yellow cake mix. I ended up having way more than 6 oz. of cake mix, actually 3 times that, so I mixed the leftover cake mix with 1/2 C vegetable oil and 2 eggs. Bake at 350 for about 10-15 mins - this makes 8-9 very large cookies. Then I made some chocolate cookie frosting - 1 C confectioners sugar, 2 tablespoons butter, 1/2 tsp vanilla, 1.5 tablespoons cocoa powder, about 2 tablespoons milk. The perfect companion to the yellow cookies, yum!
